My diet is getting boring, and I’ve mostly been having
cereal, oatmeal, rice, whole wheat bread, veggies, fruit, seaweed.
Is there anything specific that I should be having? What should I be avoiding?

This article might help you. It’s about a diet for lowering cholesterol.

You have the right idea of what you can eat to help lower your cholesterol (oatmeal, whole wheat stuff)
but instead of thinking you can only eat that stuff, I think you should just focus more on staying away from the foods that are high in cholesterol.
That means keeping away from anything fried and from anything with a lot of butter in it. You should also avoid shellfish like clams, oysters, shrimp, etc. Also limit ice cream and cheese as well.
As long as you just stay away from those things, you shouldn’t have to be THAT strict with the rest of your diet.

In fact low cholesterol diet could be anything but boring:
1.Broad variety of fish
2.Chicken breast (but not chicken legs and wings)
3.Shitake mushrooms.
4.Beans and peas.
5.Nuts
6.Peanut butter.
Try to avoid seafood other than fish (shrimp, scallops, and shellfish)

Keep eating that way and this is what your doctor will say, “We have tried lowering your cholesterol but it is still high. You must have a genetic predisposition to high cholesterol. Lets try this new statin drug (that I own stock in). ” Cereal, oatmeal, rice, bread, and fruit all contain excess carbohydrates. Excess carbohydrates cause insulin release. Insulin release causes insulin resistance. Insulin resistance causes more insulin release. High amounts of insulin cause inflammation in the arteries. Inflammation in the arteries causes plague build up.
Besides insulin, you need to watch trans-fats, vegetable oils, HFCS, excess omega 6, powdered eggs and cheese. You do not need to worry about saturated fat, eggs, red meat, or real cheese.
Oh, that number that your doctor says is high cholesterol, is probable a very healthy normal cholesterol. They keep lowering the number because people with artificially lowered numbers keep dying. Also increases the potential profits of the drug companies.
